Rare Hare Willow Creek Vineyard Brut is typically a blend of Pinot Noir and Chardonnay, all grown on the Willow Creek Vineyard on the Mornington Peninsula.

The fruit is handpicked then whole bunch pressed, minimizing the extraction of harsh phenolic compounds. The juice ferments in seasoned French barriques, or small barrels.

After blending the wine is inoculated for secondary fermentation in bottle, which produces its effervescence. On average, the wine spends at least three years ageing on lees before it is prepared for release.

Pale yellow, Rare Hare Willow Creek Vineyard Brut has delicate structure balanced by fresh citrus flavours. Perfect to whet the appetite. Drink within two years of release.
